Born through the collaboration of owner Ermenegildo Giusti and reknowned winemaker Graziana Grassini.
A Prosecco with a new personality, as complex as a “classic methode” sparkling but enjoyable as a Prosecco that expresses the talend of the Asolo Montello territory.
Production area: This Prosecco with controlled and guaranteed designation of origin is made with the best Glera grapes coming from the vineyards in the hilly area of Montello and the Asolo hills, in the municipality of Nervesa della Battaglia and more specifically in the vineyards of the “Aria Valentina” estate, located on the Montello slopes.
The production method starts with a soft pressing and cold static decantation of the must at a controlled temperature. Primary fermentation for 15-20 days and then maturation “sur lies” for two months. Once the base wine has stabilized a secondary fermentation takes place following the Martinotti method and is carried out for a long period of 6-9 months on the lees prior to filtration and bottling.
Bouquet: Clean and elegant, with hints of golden apple and pear and notes citrus; prevailing floral notes of orange blossom and acacia.
Flavour: Good acid note, fresh flavour, crisp and savoury structure, with a pleasant and persisten almond after taste.
Food pairings: Excellent both as an aperitif and throughout the meal; always suitable for important occasions.
Serving temperature: 6 – 8 ° C.
