The Chianti Superiore DOCG is a wine obtained from vineyards with low yield and with quality requirements that are higher than for a regular Chianti. This one produced by Donatella Cinelli Colombini at Fattoria del Colle 404 meters above sea level on hills that are well exposed to the sun and with soils of late Quaternary origin made of sands and sea clays.
Type: dry red
Production area: Trequanda, Toscana, Fattoria del Colle.
Vintage characteristics: the first semester of the year was very rainy, in the summer the very hot days alternated with violent storms. The vegetation cycle began 15 days earlier than usual, but when veraison occurred the alignment with the usual calendar had already occurred. Ripening of the grapes was slow and gradual both under a technical (alcohol and acidity) and a poliphenolic profile.
Grape types: 90-95% Sangiovese, 5-10% Canaiolo.
Grape harvest: from September 15st to October 05th. The grapes were handpicked and carefully chosen. The grapes reached the cellar within 30 minutes of being picked.
Vinification: the soundness of the grapes, the small dimension of the berries and their soft skins, the perfectly lignified grape-seeds are the foundations of the excellent quality of this wine.
Quantity produced: 30.000 bottles
Colour: brilliant ruby red
Aroma: fine, complex, evident grape aroma together with more evolved elements that recall ripe red berries and violets which is usual in Chianti wines.
Taste: harmonious, thanks for the excellent balance between fruit and structure. The tannins although present appear soft and harmonize with the fullness of taste that lasts at length and pleasantly.
Analysis: alcohol 13%vol; Tot. SO² 62mg/l ; extracts 28,1 g/l; tot.ac. 5,32 g/l; vol.ac. 0,68 g/l; Serve with: may be served with the whole meal and goes equally well with Tuscan, Asian or North European dishes.
Way of serving: Room temperature (18-20°C) in crystal tulip shaped wine goblets. Home ageing: 3-4 years after the harvest. Keep the bottles lying down in a cool dark place.
